Exercising and eating healthier are some things we've been working on lately. Last week we signed up for the gym, so now I guess it's time to start finding some healthier snacks!
While searching through #pinterest and #tasty's app I found a recipe for Peanut Butter Energy Bites. These caught my eye because I'm a huge snacker, especially when I'm working from home. These bite's help me feel less guilty while I snack!

Ingredients: (for 16 balls)
2/3 cup Creamy peanut butter
1 cup old fashion oat, plus extra for folling
1 1/2 tablespoon honey
1/4 cup mini chocolate chips, plus extra for rolling
1/4 cup flax seed, optional
(Notice in our photos we don't use mini chocolate chips. Apparently Colombia doesn't sell chocolate chips so we ended up buying a Hershey's bar and smashing it up.)
Instructions:
In a large bowl combine peanut butter, oats, honey, chocolate chips and flax seed.
Mix together until evenly coated.
Once you're done mixing, cover the bowl and refrigerate for 30 minutes.
After the 30 minutes is up, ball up your energy bites and roll in the extra oats and chocolate chips.
