We had some friends visiting for the weekend and I wanted to make them a nice app. After looking through several different recipes we decided on Bruschetta. It was my first time ever making Bruschetta so I was super nervous with how it would turn out, but it ended up being delicious!

Cooke Time: 20 mins
Serving: Makes 24 small slices, serves 6-10 as an appetizer
Ingredients:
6 or 7 ripe tomatoes
2 cloves garlic, minced
1 tbsp extra virgin olive oil
1 teaspoon balsamic vinegar
6-8 fresh basil leaves, thinly sliced* or chopped
3/4 teaspoon sea salt (more or less to taste)
1/2 teaspoon freshly ground black pepper, (more or less to taste)
1 baguette French Bread or similar Italian bread
1/4 cup olive oil
Directions:
Bring 2 quarts of water to a boil.
As the water is heating make shallow cuts in a cross pattern at the top ends of the tomatoes in order to make them easier to peal.
Once the water is boiling, remove the pot from the heat.
Put the tomatoes in the hot water and blanch for 1 minute.
Remove the tomatoes with a slotted spoon and let sit until cool enough to handle.
Gently Peel off the tomato skins, cutting out the stem base with a knife.
Cut the tomatoes into halves or quarters and squeeze out most of the juices and seeds.
Preheat oven to 450 F (230 C)
Chop the tomatoes and toss them with garlic, olive oil, vinegar, basil, salt and pepper in a medium mixing bowl.
Slice the bread into half-inch thick slices.
Brush one side of each slice with olive oil and place olive oil-side down on a baking sheet or roasting pan.
Place the slices in the oven on the top rack and toast for 5-6 minutes until lightly browned around the edges.
Serve the toasted bread with tomato mixture either plain in a bowl next to slices, or on top of each slice individually laid flat on a platter.
