Scrolling through more #pinterest recipes to mix up our menu and I came across this gem. We were a bit weary to try but ended up loving it! We will definitely be making this again.
Here's how to do it!
Ingredients: (Serves 4)
1/2 cup basil, fresh leaves
2 cloves garlic
1 tomato large
2 oz jarred roasted red peppers
salt to taste
pepper to taste
1/4 cup olive oil
2 tbsp walnuts
4 slices sourdough bread
4 oz Mozzarella cheese
2 tbsp Parmesan, grated
Instructions:
To make the pesto, place the basil, garlic, walnuts and Parmesan cheese in the food processor. Season it with salt and pepper to taste. Blend well. While the food processor is on, pour the olive oil slowly into the mixture to get the desired consistency.
Assembling the sandwich: you will use the sourdough bread, mozzarella, pesto, tomato and roasted red pepper.
Lather four slices of bread with pesto on one side.
Place two of the slices right on the panini maker, pesto side up.
The assembly all happens on the panini maker (or toaster oven, or grill pan whichever you have).
Add the mozzarella cheese on right away giving it a minute to settle in and start melting.
Once it begins melting, start piling the tomatoes and roasted red peppers.
Place the top two pieces of pesto-lathered bread on the pan pesto side up.
Flip the piece of bread housing the cheese, tomato and roasted red pepper onto the top piece of bread to continue heating it while crisping the other end of the sandwich.
Once you have two crispy, golden sides you're ready to go!
We don't have a panini maker or a toaster oven so we cooked ours on a grill pan. It still turned out delicious nonetheless!
We also couldn't find sourdough bread at the grocery store, so we just used regular white bread which still tasted good. However, I'm excited to try this again once we're able to find sourdough bread.
Overall we both loved this recipe and can't wait to make it again. We talked about adding chicken to it next time for a little extra protein.
